Women who bake history: The University’s all-female pastry team

Author: Molly Di Carlo

Eight members of the pastry team pose behind a table laden with an assortment of colorful pastries, cookies, and cakes in a commercial kitchen.

Sinai Vespie, executive pastry chef, isn’t just leading the Three Leaf pastry team; she’s orchestrating a symphony of sugar, spice, and sheer talent.

In a kitchen on the north side of campus, this all-female crew is rewriting the recipe for success. Under Vespie’s expert guidance, the team each brings their unique flavors and culinary experiences, and are crafting more than just desserts for events large and small.

“This team is made up of some amazing pastry chefs who take true Notre Dame pride in putting out some of the best desserts in the area,” Vespie said. “They work together like no other and take on challenges with grace. I love all of them. Their hard work and dedication to excellence is exemplary and I am honored to work alongside them.”

Team members include Kelsey Omvig, assistant pastry chef; Kylie Priddy-Ledbetter, demi sous chef; Keela Yoder, demi sous chef; and pastry cooks Allison Zimmer, Drew Pickering, Kaitlyn Pearl, Katherine Yoo, Megan Gallagher, and Sierra McFarland.

Take a look inside their kitchen as they bake up a legacy.

Three culinary students in white chef coats and Notre Dame baseball caps work on frosted cakes in a kitchen. One student smooths frosting on a plain white cake, while another decorates a light pink cake with small piped flowers.
A hand holds a tray of mini tarts topped with whipped cream, raspberries, blueberries, and chocolate shavings. In the background, culinary students in white chef coats prepare other desserts in a commercial kitchen.
A baker wearing a "Three Leaf" cap carefully decorates a frosted pink cake with edible pink flowers and gold accents. The cake sits on a white rotating stand on a wooden table. Another frosted cake is slightly blurred in the foreground.
